I’m one of those people who is happy to eat the green part of most root vegetables. Radish tops? Yes, I’ll cook with them! Beet greens? Yes, I’ll cook with them! Kohlrabi greens? Yes, I’ll cook with them! But with carrot tops, I do usually end up throwing them away because I haven’t found a preparation where I can escape the chewy bitterness.
